The Story of Stollen

Bread is a staple food in many regions across Europe and, during festive times, special varieties of bread are baked and enjoyed. Just like eating zongzi during the Dragon Boat Festival and mooncakes at Mid-Autumn, traditional Stollen inspires the taste of Christmas for many Europeans.

Stollen was originally made with flour, yeast, oil and water as bakers were not permitted to use butter during the fasting season of Advent. The resulting bread was hard and tasteless.

During the 15th century in medieval Saxony, in central Germany, Prince Elector Ernst and his brother Duke Albrecht decided to remedy this by writing to the Pope in Rome. The Saxon bakers needed to use butter, as oil in Saxony was expensive, hard to come by, and had to be made from turnips.

Pope Nicholas V denied the first appeal, which came to be known as the ‘Butter-Letter’. Decades and many other letters passed before Pope Innocent VIII finally granted permission to use butter – but only for the Prince-Elector and his household. The ban on butter was eventually removed when Saxony became Protestant.

Over the centuries, Stollen evolved from a fairly tasteless loaf to a rich, sweet bread filled with fruit and a knob of marzipan at the centre. Dresden honours its long history of Stollen baking with a festival that takes place on the Saturday before the second Sunday in Advent.
